How to cut vegetables?

 As a vegetable artist, do you go for big strokes first or small ones?

I have been taken back to childhood where one of my chores was cutting vegetables. When I started cutting cluster beans yesterday, there was some nicety to chopping of the ends of them all first and then lining up in bundles (This always reminds me of Unity is Strength). Yes you wnat to optimise and try to get as many in one cut but not at the cost of your fingers.

Today its broccoli. I wasnt sure if I would get through all the three heads of it. Its one of our favorite vegetable because of the peanuts that go into it. I was thinking that I will do as much as I can and wrap up the rest for later. Having done one, it seemed unsurmountable. I then realised something, instead of cutting it haphazardly, if I maintained some rhyme, then it was better, both in packing up if I had to and also about the feel good factor of cleaning up as we go. With that bite sized approach, I realised it was even motivating to cut it all fast.

Then theres the calorie burning effect of standing and cutting vegetables. It takes calories to be prepared well for tomorrow. With veggies cut, dinner prep with healthy veggies is so much happening in reality than just thoughts.
